I take my breakfast very seriously. And I take breakfast made for dinner even more seriously. I love thinking up new ways to use eggs for breakfast or dinner recipes. Roasting the red pepper had been playing on my mind, but I wanted to try out something new this time besides bunging them into chips and dips platter.

Lovely, vibrant, juicy and wonderfully colorful red pepper have flooded the vegetable carts and shelves in the market. Roasted red peppers are respectable members of the meze “salad” course in Arab restaurants.  They are sweet, juicy, and wonderfully colorful.

The egg can be substituted with feta or any other young and salty white cheese, which is ideal if you’re not eating the galettes straightaway. The contrast of the red peppers and the egg yolk make these pastries stunningly beautiful. Fancy up your breakfast or brunch with this individually portioned baked egg and red pepper galettes.

  • 4 medium sized red bell pepper cut into strips (half inch)
  • 3 small sized onion roughly sliced
  • 4 Cheery Tomato
  • Fresh thyme
  • 1 tsp cumin seeds
  • 1 tsp coriander
  • 9-10 tsp oil
  • Finely chopped Parsley
  • Finely chopped Cilantro
  • 2 Beaten Eggs for brushing the pastries
  • 12 tsp sour cream for pastry coating
  • 6 eggs
  • 1 sheet Puff pastry it should be thawed.
  • 1 tsp Black Pepper powder
  • Salt to taste

Instructions
  1. Preheat your microwave to 200C. Next, take a bowl and mix onion, thyme, tomato, spices, red pepper slices, with oil and add salt to taste.
  2. Take a microwave safe roasting tray and roast the veggie mix for 30 minute. Roast the veggies until they get soft and tender. Stir the veggies every after ten minute that they will not get burnt. But, do not make them crisp.
  3. Now remove the veggie mix from the oven and mix the herbs and your desired seasoning in half of the veggies. Set the oven up to 220C. Next, keep the pastry sheet and cut into equal square shapes. You can take 6 piece of pastry squares for 6 people. Place the pastries on the silicon tray for baking.
  4. Galettes Preparation: Now brush the pastries with mixture of beaten egg. Spread two teaspoons of sour cream on the puff pastries. Fill the top of sour cream portions of pastries with pepper mix, and leaving a gap from the border that the pastry edges raise properly. Do not forget to leave a place in the middle of the pastry for the egg.
  5. Now bake all the galettes for 15 to 16 minute. Remove them from oven and crack egg in the middle of each galette and place them again into the oven. Bake them for 5 to 7 minute. Finally remove the galettes from the oven and sprinkle black pepper and parsley on the top. You can add seasoning according to taste.
  6. Serve hot and crispy red pepper with baked egg galette and have it with your favorite dip.
Recipe Notes

Important Note

Serve the galettes immediately after removing from the oven. Otherwise you will unable to have the real taste of galettes.

You can have galettes alone or with dip. It is simply upto you.
