This French toast casserole is very easy to make and it only needs a little preparation work. I love the flavor of the cinnamon and texture of a simple french toast. With light vanilla glaze, this is perfect for brunch or a Holiday breakfast. Surprisingly delicious!

Traditionally Brioche Bread or Challah Bread is the choice for French Toast Casserole. But this easy overnight french toast casserole breakfast has been made a bit healthier by replacing the traditional bread with whole wheat bread.

Brioche is the king of delicious bread.  It is so moist, soft, and buttery, it really makes all of the difference in this french toast casserole.

  • 6 Large Eggs, lightly beaten
  • 2 Cups milk
  • 3/4 Cups Half and Half
  • 1/2 Cup sugar
  • 1 tsp Vanilla Extract Get it Here

For topping
  • 1/2 Cup packed brown sugar Get it Here
  • 3 tbsp All purpose flour
  • 1 tsp Cinnamon
  • 2 tbsp butter

Instructions
  1. Grease a 9x12-inch baking dish with butter.
  2. Cut bread into 1-inch cubes. And place cubed bread in prepared casserole dish.
  3. In a medium-sized bowl whisk milk, eggs, half and half, sugar and vanilla extract together. Pour wet mixture over bread and gently toss to coat. Sprinkle cinnamon over the top. Cover the dish with plastic wrap and refrigerate for about 8 hours or overnight.
  4. Remove the plastic wrap from baking dish.
  5. In a small bowl mix brown sugar, flour, and cinnamon. Cut butter into small pieces and add to flour mixture. With a fork blend butter into mixture until it resembles small crumbs; sprinkle over bread in the baking dish.
  6. Bake in the preheated oven until browned and bubbling about 30 minutes.
