Creamy Dill Cucumber Salad Recipe to Stay Cool on Summer

It is summer time! So, I think it’s a perfect time to release my favorite summer recipe, creamy dill cucumber salad! Crisp cucumbers and fresh summery dill all tossed in a simple sour cream dressing.

One of the best things about this easy recipe is how quick it is to make! Yes, this creamy cucumber salad is very easy to make! You have to slice up some cucumbers and onions. Then toss them with yogurt, lemon juice, etc to make them creamy.

You can replace yogurt with the reduced-fat sour cream (in place of full-fat) to lowers the calorie count without losing taste. Adding white onions to this cucumber salad adds great flavor.

I’ve always made the dressing for this cucumber salad, use sour cream, a dab of mayonnaise and a hint of vinegar for some tang.

If you prefer a Cucumber Salad with a Vinegar Style Dressing, you can simply replace the dressing with the below ingredients.

  • 3 tablespoons white vinegar
  • 3 tablespoons oil
  • 1 teaspoon sugar
  • Salt and pepper

The cucumber is sure to keep you nice and cool and hydrated this summer. With the added creamy flavor, you can beat the heat!

Instructions
  1. Peel the cucumbers and cut in half lengthwise.

  3. Place cucumbers in a colander over a bowl; sprinkle with salt and toss. Let stand 15 minutes.
  4. In a large bowl, combine dressing ingredient; stir in cucumbers.
  5. Refrigerate 1 hour before serving

Just add some more mayonnaise if the sauce is too runny for your liking.
